| Oatmeal Raisin Cookies Ingredients -------- ------------ -------------------------------- 3/4 cup sugar 1/4 cup brown sugar -- firmly packed 1/2 cup butter -- softened 1/2 teaspoon vanilla 1 egg 1 cup flour 1/2 teaspoon baking soda 1/4 teaspoon cinnamon 1/4 teaspoon salt 1 1/2 cups oats, rolled (quick cooking) 1/2 cup raisins or chocolate covered raisins Heat oven to 375° In a large bowl, combine sugar, brown sugar and butter. Beat until light and fluffy. Add vanilla and egg: blend well. Gradually add in flour, baking soda, cinnamon, salt and mix well. Stir in oats and raisins. Drop dough by rounded teaspoonfuls 2 inches apart onto cookie sheets. Bake at 375° for 7-10 minutes or until edges are light golden brown.
