Hazelnut Holiday Balls
Ingredients
½ cup sugar
½ cup brown sugar -- firmly packed
½ cup butter -- softened
½ cup peanut butter
1 teaspoon vanilla
1 egg
1 ¼ cups flour
1 teaspoon baking soda
½ teaspoon salt
½ cup sugar
Strawberry jam, jelly or preserves*
Makes 4 dozen cookies
Directions
- Preheat oven to 375°
- With an electric mixer beat together ½ cup sugar, brown sugar, and butter until fluffy. Add peanut butter, vanilla, and egg continuing to beat until ingredients are mixed well. Add flour, baking soda, and salt. Mix well.
- Form dough into 1" round balls, roll in sugar and place on cookie sheet spaced about 1" apart. With thumb or handle end of a spoon make an indentation in the center of each ball.
- Bake at 375° for 6 to 9 minutes and remove from cookie sheet to wire rack. Spoon ½ teaspoon of jelly, jam, or preserves into the center of each cookie.
*Strawberry jam is the favorite filling for this cookie. Experiment with other jams and jellies to provide an assortment.
