Maple Date Pecan Cookies
Ingredients
1 cup brown sugar -- packed
¾ cup unsalted butter -- softened
¼ teaspoon vanilla extract
¾ teaspoon maple extract
1 egg
1 ½ cups flour
¾ teaspoon baking powder
¾ teaspoon baking soda
¼ teaspoon salt
1 cup dates -- finely chopped
½ cup pecans -- chopped
Makes 5 dozen cookies
Directions
- Combine brown sugar and butter and beat with an electric mixer until light and fluffy. Add vanilla, maple extract and egg - blend well. Add flour, baking powder, baking soda and salt and mix well. Mix in dates and pecans. Cover with plastic wrap and refrigerate for 30 minutes.
- Heat oven to 350° F. Shape dough into 1-inch balls and place 2 inches apart on ungreased cookie sheets.
- Bake at 350° F for 9 to 12 minutes or until light golden brown. Cool for 1 minute: remove from cookie sheet.
