Oatmeal Butterscotch Cookies
1 cup unsalted butter
¾ cup brown sugar -- packed
¾ cup sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon baking soda
½ teaspoon salt
3 cups quick-cooking oats
1 ½ cups flour
1 ⅔ cups butterscotch chips -- 1-11 oz package
Makes about 4 dozen cookies
- Preheat oven to 375°
- With an electric mixer on medium speed beat butter, brown sugar, and sugar until fluffy. Beat in eggs and vanilla extract. Reduce speed to low and add cinnamon, baking soda, and salt. Continue beating and gradually add oats, flour, and butterscotch chips.
- Drop 1" of dough onto ungreased cookie sheet.
- Bake at 375° for 8 minutes for chewy cookies or 9-10 minutes for crispy cookies.
- Remove from oven and cool on baking sheet for 3 minutes. Move from baking sheet to wire racks and allow to cool completely.
